Healthy Vanilla Coconut & Cinnamon Granola Recipe

Granola is a great ‘wake up’ breakfast that can be easily thrown together from almost anything in your kitchen cupboard. With a delicious mix of nuts, seeds, dried fruit, oats and (typically) natural binding ingredients, its the perfect slow releasing energy boost to get you set for the day

Granola is one of those foods that’s known to be ‘healthy’ however most packaged products these days contain unnecessarily high amounts of sugar, fats and oils that turn this healthy breakfast into calorific bowl of sugar.

I can’t actually believe its taken me this long to share my recipe with you guys but i haven’t actually made it in years! Baking your own granola means you can control exactly what goes into it, so its not only perfectly tailored to your taste but you can make it has healthy or as naughty as you like!

For my recipe i used as many natural ingredients as possible with no refined sugars or unnecessary sweeteners. It’s up to you what types of nuts, seeds or fruits you’d like to add but for me a simple mix of Omega 3 seeds, grains and whole almonds was what i found lying around in my kitchen cupboards with a tasty infusion of coconut and cinnamon.

INGREDIENTS
2 Tbsp Coconut Oil
1 cup Mixed Nut & Seeds or even dried fruit (your choice)
3 Tbsp Runny Honey
1 Tsp Vanilla Extract
2 cups Rolled Oats
3 Tbsp Cacao powder (optional)
2 Tsp Cinnamon (or also add ginger, nutmeg, cloves and all spice for a gingerbread taste!)

METHOD
Prep the oven and set to 190C
Combine all the ingredients together in a mixing bowl and use your hands to mix/ melt the coconut oil
Pop into an oven proof dish (to make chunky granola) or space out on a baking tray (for a loose granola)
Bake for 20 minutes or until golden brown, stirring occasionally every 5 minutes
Remove from oven and add your chosen spice (added post-bake for a fresher taste)
Mix together then set aside to cool
Once cool, serve and pop the remainder of the granola into an air tight jar which will keep for weeks!
